Checking the colour, a few minutes before first crack.
The night shift is when coffee gets our full attention.
When the streets are quiet, there are no deliveries and no phones ringing. It is just the roaster, the beans and the sound of first crack.
We roast one origin at a time in small batches, taste every batch before it is bagged, and ship in the morning. That way the beans reach you soon after roasting.
22:00
The city goes quiet
The shutters come down on our street and the roaster starts to warm.
00:30
First crack
Small batches, one origin at a time, roasted by ear and by the clock.
03:00
Cupping in the dark
Each batch is tasted before it is allowed anywhere near a bag.
06:00
Packed at first light
Beans rest, get sealed and are ready to ship as Lisbon wakes up.
